Claxton’s has bottled a 5 year old Highland Park cask, in their well-known “pocket lark” bottle – the bottling is at full cask strength at 57.8%, and has aged in a “STR Barrique” cask before bottling.
A really delicious Highland Park bottling from Claxton’s, which shows that whisky can easily be young and taste good 💪🥃

Nose | Very mineral, there is a note of rose water in the background, a little salt and seaweed and a little bit of oak, along with vanilla. Oysters, sauna oil and the typical note of Highland Pak heather |
Palate | Very maritime, and milk chocolate is working its way to the forefront, also pancakes with maple syrup, the pancakes have been on the pan a little too long, making them easily burnt and smoky |
Finish | Dark, milk and white chocolate, in short: chocolate. Maple syrup again, the maritime note is pushed back a little, but still with seaweed, salt and even salted pretzels and a little strawberry |
